Back to the Grind!

Happy Monday Everyone!

Today it’s back to the grind – which is always a bit hard after a vacation! You have to transition back to reality.

I am back from St. Augustine FL, which was a total blast.  I drove up there Friday afternoon and got there around 5pm.   I was visiting my good friend Kelly, who I have known since junior high.  Our other friend, Alisha, flew in from Ohio for the weekend too.   I’ve known her since third grade- it’s amazing how long it’s been since we first met.  What’s even more amazing is that even though we all live apart, we seem to always pick up right where we left off!

Driving into St. Augustine

We spent Friday evening talking about ‘the good ol’ days’ back in high school and laughing about the ridiculous things we did.  We snacked on guacamole, salsa, chips, and drank some alcoholic beverages.  My drink of choice for the evening were cosmos- I just love them 🙂

Myself, Alisha, and Kelly

We had a few of these throughout the night…

Always a good start to the evening 😉

Friday we spent the evening catching up and heading to a couple of bars.  The bars were pretty fun and we all enjoyed ourselves! We stayed out until 2am and hit the sack by 3am.

Saturday morning we grubbed on a variety of eats that Kelly’s boyfriend cooked for us (he’s definitely a keeper!).  He made pancakes, sausage, bacon, eggs, bagels, you name it! It hit the spot after a night of dancing and boozing!

Hungover Eats!

We hit the beach by noon to catch some sun.  I wore my SPF 30 but still managed to get burned on my stomach – ouch!

Kelly and her dog, Frank. How cute is this!?

Saturday night was pretty much a repeat of Friday!  More good eating, some drinking, and LOTS of dancing! We had such a blast!

Ready to go out!

Kelly’s boyfriend thought we looked like we were going to prom since we all wore long dresses, so we posed like we were getting our prom picture:

Sunday morning we walked around Flagler College, where Kelly went to college.  This campus is absolutely stunning and has so much history.  I loved it!

We then went for lunch at a Taco restaurant.  It was so delicious and the perfect meal after another night of partying.  I got the chicken quesadillas, chips and salsa and guacamole.

More hungover eats 😉

Around 1:00pm I said good bye to St. Augustine and drove 4.5 hours back to my apartment in Georgia.  As I got closer to town, I realized I had no food in my place so I picked up some Chinese take out for dinner.  I also picked up Sophia and Boo, who were so excited to see me! I missed them!

Today’s Workout

I completely crashed early last night only to wake up bright and early to teach an Indoor Cycling class at 6:30am.  It was hard to pull myself outta bed! I could have definitely slept longer.  Fortunately my energy came back and I had a nice class.

After Cycling I took the pups for their 2 mile walk.  It was a very nice walk, they were both so good.  Sophia did, however, pick up parts of a dead animal and wanted to carry it in her mouth (gross!).  She eventually put it down.  It was nasty!

Breakfast

The spinach in my fridge was about to expire so I decided on a spinach and cheese omelet for breakfast:

  • 1 whole egg
  • 2 egg whites
  • Spinach
  • Mozzarella cheese

Big ol' handful of spinach

Cooking up the eggs, spinach and cheese

Breakfast is served!

On the side I had a light whole wheat bagel and some strawberries. I had my coffee all ready to go for work, but ended up forgetting it on the counter.  Darn!

I miss you!
