Finding the New "Me"

Good Morning!

I have a busy week coming up at work.  As I have mentioned before, I am leaving my current job as the Assistant Director for Fitness and Wellness at the University I work for to move back to Ohio (we’re I am from) and move in with my boyfriend Andy.

This was a difficult decision to make, as I love my job, but I also really miss Ohio and want to start my life with Andy. It was definitely the right move to make and I am so excited.

Any how, this week we are interviewing 2 candidates for my job (which is so strange!).  The interviews are very long, and it’s an all-day process.  I am part of the committee to find the new “me”, so to speak!   We have another candidate we are interviewing next week as well.  All three are great and I am excited to meet them!  I hope to leave my position at the end of June in good hands 🙂

As for myself, I am in the process of applying for jobs! I have one prospect that would be the ideal job for me so I’ll keep you updated if I get an interview!

Dinner

Last night I was in the mood for more pizza (when am I not!?) so I decided to cook one up using Walmart brand dough mix.

My pizza included:

  • Mozzarella cheese
  • Mexican Blend cheese
  • Parmesan cheese
  • Chopped peppers (frozen)
  • Chopped onions (frozen
  • Tomatoes (canned)
  • Pizza sauce
  • Basil
  • Red pepper flakes

While cooking, I enjoyed a glass of red wine.  I have a lot of booze to drink before I move at the end of June 😉

Cooking is more fun with wine! 🙂

Sunday Dinner

I ate 2 large slices of pizza and saved the rest to have for leftovers tonight.

Breakfast

Since I made blackberry french toast on Saturday, I was craving some of that sweet goodness this morning.  I changed up the fruit and used frozen raspberries and fresh strawberries instead.  It was a winning combination!

After the morning walk with the pups, I got to cooking in the kitchen!

Berry French Toast:

  • 3 slices whole wheat bread
  • 1 whole egg
  • 2 egg whites
  • Almond milk
  • Cinnamon
  • Frozen raspberries
  • Fresh Strawberries

Delicious Strawberries

Berry French Toast

To drink I had a mug of black coffee and a glass of Original Almond Milk

Monday's Breakfast

Lunch

For lunch today I made a chicken salad wrap with strawberries.  I am loving strawberry season! They are so delicious.

Chicken Salad

  • Chicken, cut into cubes
  • Light mayo
  • Plain Greek yogurt
  • Dill
  • Salt
  • Pepper
  • Sugar (I like a hint of sweetness in my chicken salad)

On the side, I packed some Vanilla Greek Yogurt and a banana

  1. I love where I live…Austin, TX! I grew up here and can’t imagine being anywhere else! Congrats on your move and moving in with the boyfriend is a fun step!! 🙂

  2. I hope the job prospect works out for you! I can’t wait to hear more about it.

I love my current “job”. Being at home with Makenzie makes my day. I do look forward to going back to work and pursuing something I am more passionate about as well though.

  3. Well, you just can’t go wrong with pizza and a glass of red wine can you???? Looks great. I love where I live, but I would love to love my job more. I feel like something is missing. I love my coworkers and the company, but I am not satisfied with my career as a whole. I don’t look forward to going to work.

  4. Pizza and red wine – YUMMMMM!

Right now my job is a job and it serves it’s purpose. I have crazy flexibility and work with awesome people, but it is corporate and not uber rewarding. I also have a nice gym at my work so I can workout over my lunch breaks, love it.

My job is definitely not my passion – I find that in other places, like being a Mommy, wife & good friend. It would be nice if my job could be my passion too though : )

  5. I bet it is so weird to look for “you.” I hope one of the prospects works out! I just made a pizza quesadilla and thought of you. It was amazing. Tasted alarmingly like pizza hut pepperoni pizza!

  6. I’ll come help you finish off that wine if you need me to 😉 Good luck finding your replacement girl. They will have big shoes to fill 🙂

  7. We would get along SO well judging by that pizza…except I would have finished it off 😉 …and the wine…your going to get a great job – I know it ! You are a blessed gal 🙂

  8. Good luck with your job search! It sounds like your life is taking an exciting turn!

I’m actually starting a new job this week, and I think I’m going to love it! I also love where I live – I’m close enough to my parents and in-laws, and close to a major metro area without living directly inside of it. It works great!

  9. I am so happy for you for following your heart back to Ohio and to be with Andy!!! 🙂 🙂 🙂 what a fab thing!!! Wish you the best finding a new job!
Yours eats are SUPER yummy! loving the strawberry goodness, I adore this season!

As for me. I quit my job yesterday, packed all day today and have 3 days of long full days driving ahead of me. oh yes. off I go on another adventure!

  10. flowyogilates

aren’t the strawberries fabulous right now!? i love how flavorful they are!

  12. that would be hard having to give up a job you love. you def. have to weigh the good and the bad. but i think going back home can always be great too as long as the decision feels really good for you and is pulling you in that direction.

that pizza is perfectly cooked.. i always like to get the edges pretty dark yet keep the cheese soft and not brown uno? YUM

…and washed down with red wine! ❤

  13. i LOVE being an exercise specialist at a corporate fitness center, the people are fun, and the job is geat! i would love to go back to school get my masters in Nutrition and combine my two passions!!

PIZZA is always better with some wine 🙂 you are a FABULOUS pizza maker!

  15. Amazing looking pizza as always!

I love where I live (Vermont)

I’m not thrilled with my current job because I’m not in my field, but I’ll get there soon enough!

  16. LOVE the idea of strawberries in chicken salad- YUM!
I hope all of the interviews go well this week, I can imagine it is a bit strange- lol! Great workout today as well 🙂
As for the job situation, I am NOT in my ideal job right now, but I’m just happy to have a job for the time being.
And, no I do not like where I live..but I’ll probably be here for a while- Craig has a really good job here- I’m just along for the ride 🙂
