I Love Eggs

I really really love eggs! They are so delicious and make a great meal any time of day.  They’re full of nutrients and good taste, so what’s not to love?

Eggs are a naturally nutrient-dense food, which means they have a high proportion of nutrients to calories. One large egg has 70 calories and provides 13 essential nutrients in varying amounts.

Eggs are an excellent source of choline and a good source of the highest quality protein and riboflavin. Many of the egg’s incredible nutrients are found in the egg yolk, including choline, folate, lutein, zeaxanthin and vitamin D.

Missing out on the Yolk!

About 6 years ago I had a personal trainer for about 4 free sessions and he had me write down my food in a food log.  I was 19 at the time and so this was all new to me.  When I brought my food log in, he pretty much told me everything I ate was “bad” and that I should be eating better.

I don’t think my diet was all that bad…I mean, so what if I ate M&Ms or ice cream daily? 😉 but he came from a body building background and so basically if it wasn’t “clean” than it was bad.

He gave me some suggestions for meals and one of them was to have a bowl of oatmeal and egg whites for breakfast each day.  I think I ate that breakfast everyday for 4 years straight! (these days I have much more variety and don’t rely on my “safe” meal of oats and egg whites...Borrring!) Come to find out I was missing out on a lot of nutrients found in the little yellow guy…the yolk!

The egg yolk is actually my favorite part of an egg.  I love the taste and I think it’s delicious.  My favorite way to eat eggs is over easy and so dipping my toast in the egg yolk is amazing.  So long egg whites only! I’m making up for those lost years without ya!

There are, however, times when I do like only egg whites or limited egg yolks, especially when baking or making omelets.  Omelets have so much other flavor going from the veggies and cheese, so the yolk is not the star of the meal.

Egg-Filled Meals

My love of eggs showed up in both my breakfast and lunch today.  For breakfast I cooked up a delicious egg scramble using 1 whole egg, 3 egg whites, some shredded mozzarella cheese and frozen broccoli.

On the side I enjoyed a light whole grain english muffin, fresh strawberries, and black coffee to drink.

Tuesday's Breakfast

For lunch I made some egg salad which consisted of 2 whole eggs, about a 1/4 cup of chopped onions, salt, pepper, some dijon mustard, and about 2 tbsp of light mayo.

I topped another english muffin (I love these!) with the egg salad and on the side had some vanilla bean greek yogurt with strawberries.

This was a new greek yogurt brand that I tried.  It has about double the amount of calories than your standard greek yogurt serving (220 vs 110), but it is 2%, so that is expected.  I love 2% because it has a lot more flavor than fat free.

This brand was pretty good, but a lot different than Chobani or Dannon, which I usually get.  I would buy it again though! I really liked how it had actual vanilla beans in the yogurt.

Workout

Today was another cardio day.   I did 30 minutes on the arc trainer and 10 minutes walking on an incline on the treadmill followed by a 5 minute cool down.  Felt good!  I also had the usual 2 mile walk with the pups bright n’ early this morning.

With all the walking and cardio I do each week, I find my shoes wear out a lot quicker than normal. Today I ordered some new Saucony shoes online at  Zappos.

Saucony is by far my favorite brand of athletic shoes, they never disappoint! These were on sale for $49.46, which is pretty good for Saucony.

  1. I eat eggs EVERYDAY. I love scrambled mixed with veggies, ham, and salsa. Or mixing them with beans. Or making a breakfast burittio. Or over easy. Or fried.
    I like them all–except for hardboiled. boring.

  2. I eat eggs all the time! And people look at me like I’m crazy when i tell them I eat the whole thing and not just the white… I try to explain to them that the whole egg is one of the most nutritious things you can eat… but it usually goes in one ear and out the other…

    I love a good omelette. Preferrably stuffed with mushrooms. But I’m not overly picky in that department…

    so glad to read this post! i love eggs and i’m totally with you- i love them, but sometimes egg whites are all i need too. I don’t get why people give yolks such a bad wrap sometimes! your egg salad looks really good 🙂

  5. Asics are best for my flat feet.

    I honestly love boiled eggs. I will boil half a dozen and eat them throughout the day.

  6. Just last week I got my Saucony cross trainers from Zappos. This was my first pair of Saucony’s and so far I love them. For years I wore Asics for running but just recently switched over to Brooks and have been very happy with them.

    My favorite way to eat eggs is either poached or hard-boiled.

  8. I love eggs (from my Papa’s farm) over easy placed on top of a bed of rice and asparagus – oh with sea salt and crushed pepper on top! YUM!

    I have tried a number of different running shoes and I keep returning to Asics – they are my babies : ) I need to stop trying to cheat on them!

  10. I just recently started eating eggs. For years, I “didn’t like” eggs just because I didn’t like the look of ’em. Now I’m crazy about veggie omelets.

    I swear by my Brooks Adrenaline 10s for running. I have a couple pairs to rotate and love them.

    I really need to start incoroporating more yolks into my eggs…after seeing yours, I don’t think it’s going to be too hard. 😉 YUM!

  17. Oh my goodness I love eggs! Love them! My favorite way to eat them is over easy…I love sopping up the runny yolk with crusty bread! YUM!!!

    My favorite running shoe is by Kswiss…the K-ona! It is freaking awesome…hands down the best shoe I have ever sported!

    as a kid my mom used to pack 3 hard boiled eggs as a snack for school and a little container of salt to go with them lol.. hence my love for eggs started really young. i only recently got into scrambled eggs.

  20. Mmmmm eggs are one of my favorite foods. Everyone thinks I’m a egg freak, lol! My favorite is hardboiled, mixed with veggies, sour cream(sounds weird, but it’s so yummy), salt and pepper on top of toast.

  21. I love eggs too! It’s funny because I hated them until I switched to a vegetarian lifestyle, now I have them most mornings, and literally crave them. I didn’t know how nutrient dense they were though, great post!

  22. I have never been a big egg eater at all. They sort of gross me out. I did discover that I can handle eggwhites though so I think it’s the yolk that I really can’t stomach. I recently discovered Brooks and love them. I always thought I was a Nike girl until I realized they were killing my feet.

  24. I think that eggs would be the one thing I’d miss out on if I went completely vegan. I love a good baked egg souffle and back in the day I could do some serious damage to a plate of Eggs Benedict! I eat them very rarely now, so when I do, I go full-out, yolks and all – no egg whites only here!

  25. I ALSO went to a nutritionist with a background in body building. He was SO MEAN! I lasted 3 weeks. I told him from the beginning that I had no desire to compete, but he still treated me like I needed to reach a certain goal at a certain time. If it wasn’t “clean”, I couldn’t eat it. He didn’t want me having any carbs except sweet potatoes! It was awful. Anyway, this is a long rant, but I hope that between this and your post on competing, others will be sure they research who they are hiring!

  26. I’m actually not a huge egg eater, although I can’t turn down a good egg salad. I also like to make egg sandwiches for breakfast when I’m craving something hot and filling.

  27. When I eat eggs like to mix a whole egg with a few egg whites–the yolk is truly my least favorite part. Then I like them scrambled or an omelette and I always mix veggies with eggs–hot sauce too!

    My fav running brand is Brooks. I have quite high arches and their shoes and purrfect for my weird feet. 🙂

    I love eggs…. and the yolk is filled with healthy nutrients…. I like my eggs hard boiled with pepper and salt, scrambled with a lot of veggies and cheese… and your egg salad looks mouth- watering
    recently I have also tried 2% greek yogurt and I like it very much too … its so full-flavored
    My favorite running shoes are asics and nike… but I would love to try the reebok runtone

    I get farm fresh eggs and refuse to eat the store bought because they just don’t taste the same. I have been soo torn because I have heard so much about just eating egg whites and honestly that just doesn’t fly with me. It isn’t enjoyable at all without the yolk. So this changes everything. I am so excited – thank you thank you thank you.
    I eat eggs anyway I can cook them. My favorite would be hard to choose because I love them everyway. Egg salad is great – yours looks delicious. I love egg sandwich’s with swiss cheese. YUMMMMMMMY. Think I will have eggs this morning with turkey bacon. Have a great day.

  31. Girl, the yolk is my favorite part too! I can never just eat egg whites, because to me all of the yum is in the yolk! I really need to start eating eggs more though, I don’t eat them enough and you are right, they are SO good for you!

  33. As I was reading this, the second I got to the ‘vanilla bean’ greek yogurt, I thought ‘I HAVE to find out where she got the vanilla bean flavor’ and then low & behold…there it was 😀 Sounds sooooo good- I love vanilla bean ice cream, so vanilla bean greek yogurt sounded right up my alley!

    Favorite way to eat eggs- egg whites (I honestly don’t like the yolk..especially in boiled eggs) with spinach, mushrooms & tomatos. But, I like how you added the broccoli!! 🙂

  36. I love eggs too! I love the yolk in soft poached eggs, or fried but with the yolk still soft… Mmmm. I also like good ol scrambled eggs with a dash of cream and salt n pepper. When I make omelets I often use just whites (I buy carton of cage free whites) as I don’t feel the yolks add so much here like you said.

    My favorite shoes are the new balance 790, I bought two pairs last time because they were $25 and then I alternated them while marathon training. They are excellent! They are a lightweight shoe though with no cushion or anything. I also like the vibram 5 fingers but not for long distance running 🙂
