Easy Banana Bread Recipe

I had some old, almost black bananas to use up so I decided to make some banana bread per Andy’s request 🙂

I wanted to use ingredients I had on hand, so I spent some time googling to find a good, simple recipe.  I came across this one! I followed the recipe almost exactly:

Ingredients

  • 3 or 4 ripe bananas, smashed (I only used 2, it was all I had!)
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup, but I used the full cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

The bread came out delicious! It was a very simple recipe and I’ll definitely be using it again. It’s been making a great snack during the day at work.

I hope you all have a wonderful Thanksgiving! I am waking up bright and early for the annual “Turkey Trot” 5 mile run here in Cleveland.  Forecast is 100% rain…I think it may be a rough run!  I’ll definitely be trotting, and not racing 🙂
