His and Her Dinners

My lack of sleep from the bad storm and my 5AM wake up call yesterday finally caught up with me by the time I got home from work.  I was exhausted! I grabbed my pillow and blanket and headed straight for the couch to relax.

Andy had the same idea when he got home a couple of hours later and soon he was fast asleep on the couch while I watched the finale of the Real World Challenge (And yes, I realize I watch the same shows as high school age kids) 

I didn’t want to wake Andy up from his nap, so I headed in the kitchen to make myself breakfast for dinner.  I knew that Andy had wanted to use up some ground beef, so I figured we’d just have our own “His and Her” dinners tonight.

On my menu for the night: Waffles n’ Eggs!

I chopped up a tomato to fill in my omelet, which consisted of 1 whole egg and two whites plus a splash of milk.  Shredded cheese was also added to complete my omelet.

Dinner came together in a flash and it was oh-so-good! I love this combination!  Plus I love waffles topped with real maple syrup.

There was a time in my life when I tried to eat everything sugar free and get as few calories as possible from foods like syrup or creamer.  Long gone are those crazy days!  Bring on the real food! And what’s funny is that I used to eat enormous servings of the sugar free stuff and now that I eat the real thing, I only need a little bit to get all of that wonderful flavor.

Man Food 

Andy finally woke up after 2 hours of napping and was ready for some dinner. So he headed out to make some serious man food on the grill: Burgers!

Boo and Sophia were doing some serious begging for his burger (even after I gave them egg yolks…I guess a burger is more enticing!)

Let's make a deal...You can have some of my dry, I mean delicious, dog food and I'll have one of your juicy burgers...

For God's sake, drop something!

The rest of the evening was spent reading in bed. I’m currently reading The Help, which is such a great read so far! I wanted to read it before I saw the movie that is out.

Morning Run

I awoke today feeling well rested (finally!) and decided to take Boo and Sophia on a quick 2-mile run.  It was a great way to start the morning!

When we got back I attempted to take a picture with the dogs…

The pictures didn’t turn out so well…(although the overgrown weeds sure look pretty!)

This one was as good as it was going to get…

These two  were just more interested in cooling off on the patio instead…

Life is so hard

The rest of the morning was spent eating breakfast (Shredded Wheat and Peanut Butter Puffins cereal with strawberries and soy milk) and catching some of the Today Show before packing my lunch and heading off to work.

Almond Butter and Tomato Sandwich

I was inspired by Kelly when I made my lunch for work this morning.  The other day she talked about one of her favorite sandwiches: Peanut Butter and Tomato! This intrigued me, so I decided to try it.

I sliced up the tomato and seasoned it with salt and pepper:

I then topped two slices of bread with Almond Butter before packing it up in my lunch bag.

I packed the tomato and almond butter sandwich separately and then assembled it at work while on my lunch break.

I loved this sandwich and I think the salt and pepper on the tomato really adds such great flavor.  I’ll be making this combination again!

Gossip Friday

While sitting outside for my lunch break, I caught up with the latest US Weekly.

Fridays have become “Gossip Friday” for me since that is when the new magazine comes out.  I’ll admit, I enjoy reading celebrity gossip and just mindlessly flipping through the pages looking at the pictures.  It makes for a very relaxing lunch break too!

Blog Inspired Workouts

Remember how I had a major blah workout the other day? It turns out that all I needed was a little change and inspiration to get my workout mojo back again!

Blog Inspired Workout

One of the things I love most about reading health and fitness blogs is that you can get so many great ideas on an array of things including exercise, fashion and recipes. I especially love looking to other bloggers for workout inspiration.

During my lunch break on Thursday I decided to try a workout that Julie from Peanut Butter Fingers posted on her blog.  She said it was one heck of a workout and one of the hardest she’s posted on her blog.  I knew I wanted to try and tackle this workout! Plus, it was 30-minutes long which is all the time I have during my lunch break. Perfect!

I followed the workout exactly how Julie posted and it looked like this:


This was a great workout and I loved every sweaty minute of it! I especially enjoyed the variety of running and incline walking. The workout really flew by!  I would definitely recommend this workout to anyone wanting an intense 30-minute cardio workout that kicks your booty.  This certainly was not a blah workout!

Dinner

Due to my intense cardio session on my lunch break and the Total Body Toning class I taught at work, my appetite was in full force yesterday.  I was craving a hearty dinner and I knew that pasta would satisfy my grumbling tummy.

I searched my pantry and freezer and came up with the following ingredients to make a delicious pasta bake:

  • Whole Wheat Pasta
  • Frozen Chopped Broccoli
  • Canned Diced Tomatoes
  • Pasta Sauce
  • Chicken Sausage
  • Shredded Cheese

Once the pasta was finished cooking, I began layering the ingredients in a baking dish:

I spruced up the ingredients by adding salt, pepper and Italian Seasoning.

I topped the pasta with shredded cheese because I believe cheese makes just about every dish so much better 🙂


Since the sausage was precooked and I microwaved the broccoli, the dish didn’t have to bake that long.  I cooked it at 350 degrees for about 25 minutes until the cheese was melted.

I then let it sit in the oven on a lower temperature to keep warm since I was waiting for Andy to come home.

The Stare Down

I wasn’t the only one waiting for Andy though. Boo and Sophia anxiously looked out the window for him to come home:

Luckily Andy came home and broke up the staring match. They were so excited!

I promise they are only playing…don’t let Boo’s crazy snarl face full you.  They were giving each other kisses just moments later.  Ahh, sibling love 😉

The rest of the evening was spent eating pasta  (which was good, but next time I think I want to add some ricotta cheese for more creaminess!) and relaxing on the couch catching up on some shows.

Weekend Plans

This weekend is packed with babies! I have a baby shower for Andy’s cousin on Saturday and on Sunday Andy and I are watching his baby niece, Claire, for the day. Wish us luck because neither one of us has ever babysat, let alone changed a diaper!!

Blah Workouts

During my lunch break on Tuesday I decided to workout.  Since I work the early shift (6-2:30pm) working out during the lunch hour works best for me.  There’s no way I want to wake up earlier than 5AM to workout (gross) and working out in the evening is hard for me.  I lose all motivation to exercise when I go home.  Lunch time workouts have been a great solution!

Blah Workouts

However, on Tuesday I felt kind of blah when I was going through my workout.  Nothing sounded appealing to me.  The thought of spending 30-minutes on a cardio machine was almost depressing.  I guess I am still thinking of my lovely beach runs from last week! Transitioning from the beautiful sand and sun to the treadmill has been tough.  Instead of staying on one machine, I decided to do a bit of everything.

First, I started with a slow jog (5.0 speed) on the treadmill for 10 minutes to warm up.  Then I completed a short circuit of weights to keep me moving:


I repeated the exercises back to back then took about a minute’s rest and completed a 2nd round.

I finished up my 30-minute workout with 5 minutes on the AMT (level 5) and 5 minutes on the upright bike (level 6, RPM 85-95).

To be honest, I wasn’t feeling this workout.  I couldn’t shake the blah feeling.  But it was something and I am happy I moved my body!  The positive to having blah workouts is that it makes me really appreciate the times I have amazing workouts and feel great.  Can’t win em’ all!

Taco Tuesday

Luckily Taco Tuesday wasn’t a blah meal! I couldn’t wait to cook up the goods and dig in!

Something about Taco Tuesday  makes me want a margarita real bad.  Thank goodness I had some Skinny Girl Margarita left in the fridge!

Looks like my Pizza Friday Uniform has become my Taco Tuesday outfit as well! 😉

Tonight’s Taco Tuesday included a mixture of chicken, canned corn, and canned black beans seasoned and sauteed with salt, pepper, taco seasoning, garlic powder, chili powder and olive oil:

I just love using items from my pantry.  I always try to have beans, corn, and other canned goodies for nights like these.

Dinner came together in no time and Andy and I were ready to feast!

Another Taco Pile made it into my belly and I was a happy girl.  I was so happy I went back for seconds and devoured a bowl of ice cream while catching up on the Bachelorette (this is when Andy and I make our separate ways for a bit 😉 ).  It was a great Tuesday night!

Total Body Workout + Another Lazy Dinner

At work yesterday I taught a Total Body Toning class.  It’s a 45-minute class focusing on strength training.  I love teaching this format because I don’t have to worry about choreography like in my other classes (Turbo Kick and Step) and I can get creative with new moves.  Don’t get me wrong, I love teaching choreography and it’s a ton of fun.  But sometimes it’s nice to give my brain a rest from 32-count phrases and focus on pumpin’ some iron!

Yesterday’s Total Body Workout looked like this (click to view):

*Notes:

  • We took about a 30-second rest in between sets
  • The weights I personally used ranged from 5lb dumbbells (for exercises like shoulder raises) and 12lb dumbbells (for rows, chest presses, overhead shoulder presses, and biceps).  I used a 15lb body bar for the clean and press.
  • The squat with a front raise and leg lift looks like thisIt’s tough!
  • The side lunge and reach with an overhead raise looked like this except I used a dumbbell.

After teaching it was time for my lunch break so I decided to keep my workout momentum going and completed  30 minutes of cardio.  My workout looked like this:

Felt good to get in some heart pumpin’ cardio while listening to Lady’s Gaga’s newest CD (which is amazing!!)

Dinner

Dinner was another lazy creation.  I picked up some orange chicken at Trader Joes over the weekend and decided it would be a good night to make it since Andy was out for the evening.

First I sauteed up some sweet peppers and mushrooms in olive oil and seasoned with salt and pepper:

As the veggies were cooking I heated the chicken in a canola oil blend over medium heat on the stove:

Along side the chicken and veggies I decided to make some Near East Roasted Pecan and Garlic rice.  This flavor is so, so good!

While waiting for everything to cook I sipped on one of my favorite drinks:

I love Skinny Girl Margaritas! I really enjoy the taste.  It’s not sweet at all like a typical margarita.  It’s more of a tart flavor and it’s refreshing.  I love em’!

Once the chicken was cooked (and I was slightly buzzed!), I added the delicious orange sauce (which I microwaved for 2 minutes) and sauteed veggies:

As far as frozen meals go, this chicken is pretty tasty and I’d definitely buy it again to make one of my lazy dinners.

Play Time

When Andy got home around 8pm we relaxed outside on our patio.

We spent some time watching (and laughing) as Boo and Sophia went crazy running around:

Vacation

Tomorrow morning I leave on my flight to North Carolina for a whole week to see my family! Andy isn’t going (booo!) because he already has used most of his vacation days.  I am going to miss him and the pups so much! But I am definitely looking forward to a week of relaxing, eating, sitting on the beach, running by the ocean, and just having fun with everyone.  See ya in Emerald Isle, NC!

Do you like to fly? I’m actually a bit scared of flying and I always feel nervous and can’t relax one bit while in the air (Andy on the other hand falls right to sleep!) But I  suck it up and do it because I want to go places and see friends and family that live far away.

Full Fat is Where it’s At!

Last night was another successful Taco Tuesday!

Included in our buffet of taco ingredients were:

  • Shredded sharp cheddar cheese
  • Organic Sour Cream
  • Rice
  • Vegetarian beans
  • Sauteed sweet peppers and mushrooms
  • Chopped tomato
  • Guacamole Hummus
  • Hot salsa
  • Tortilla Chips
  • Tortillas

First, I washed and chopped some fresh veggies that I picked up at Trader Joes over the weekend:

These mini sweet peppers rule! They are so delicious.

I sauteed the veggies in some olive oil and fresh garlic and seasoned with salt and pepper

Next I made some Spanish inspired rice by using leftover brown rice Andy had made the other night.

In the rice went:

  • Cilantro (dry)
  • Chili Powder
  • Taco Seasoning
  • Black Pepper
  • Garlic Powder

I also heated up a can of refried vegetarian beans in the microwave. We were going to have leftover chicken that Andy had made, but unfortunately we left it in the oven (which was off) overnight and for the whole day. Since neither of us are into food poisoning we decided to forgo the chicken.  Vegetarian Taco Tuesday it was! 🙂

I made another taco pile for my dinner:

My eyes were bigger than my stomach tonight and I ate only about half of my pile! Or perhaps I was saving room for ice cream…which we got later 😉

This sour cream was absolutely the star of Taco Tuesday.  It’s probably the best store bought I’ve had! Full fat sour cream also makes a difference in my opinion. The low fat or fat free is bland.  Full fat is where it’s at! 🙂

After dinner Andy and I headed to Half Price Books. I am in need of beach reading material when I head to the beach this weekend for a week.

I ended up getting a few books (I even got one for $1!) and so did Andy.  It was a successful trip!

After our book purchases we headed to Jerry’s Dari for ice cream.  Andy and I both share a passion for ice cream and I love it.

What a dream boat

We each got flurries, which are basically blizzards.  They were amazing as always.  Andy got Oreo and I got Oreo and Reese Cup mixed together, which is only the best combination ever!

By the time we got home it was nearly 10pm which is bedtime for this grandma.

The Shorts

This morning started out with a walk with Boo and Sophia.  It was not nearly as hot as Monday, which was nice.  But that didn’t stop Sophia from collapsing on the patio to cool down:

Boo also was looking for some shade:

I was perfectly content since I was wearing my favorite pair of shorts:

Andy wanted me to clarify that he doesn’t hate these shorts (I said he did the other day) but he just likes to make fun of them because I literally live in them.  OK, glad we cleared that up.  Andy’s reputation is not ruined and he’s still the nicest guy in the world 🙂

I will wear these until they are falling apart…which I hope is not any time soon!

Do you eat full fat, reduced fat, or fat free dairy products? I like to eat mostly full fat, especially cheese and sour cream.  However, I do like low fat milk!

Lazy Dinners

As much as I enjoy eating healthy meals, I don’t always enjoy cooking them.  Unless a meal is quick and requires little brain power, I don’t enjoy the process of cooking a complicated meal with numerous ingredients.

For some, cooking is relaxing and a way to unwind and get creative.  But to me, it often can feel like another thing to check off my “to do” list which makes it feel stressful and not enjoyable.   Enter the lazy dinner!  I’m all about meals that have very few ingredients, take little time to cook, but are still tasty, healthy, and fun to eat.

Some of my favorite lazy dinners are crock pot chicken to make tacos, homemade pizza, and enchiladas that I can make ahead of time and just pop in the oven.  Another form of laziness is using frozen vegetables that can be added to pasta or rice dishes.  Lazy to me is not meant to be a bad thing…rather a smart thing 😉

Last night I made quite the lazy dinner by combining boxed macaroni and cheese that I had in my pantry with frozen mixed vegetables.  It was one of those nights where nothing really sounded really good to eat.  But for some reason I can almost always go for some mac n’ cheese!

On the side I munched on some flax tortilla chips, salsa and guacamole hummus (all from Trader Joes).

Shelley had blogged about this hummus and I’ve been itching to try it.  It’s a good thing I did because it’s pretty darn amazing! It has such a great flavor and it really is a perfect combo of hummus and guacamole.  It gets an “A” rating from me! 🙂

My mix of foods made for the perfect lazy Sunday night dinner! Luckily I don’t have to think about dinner tonight because Andy is on dinner duty.  I love when he cooks, he always makes really delicious meals.

In Hiding 

After a lazy Sunday night, it was time to get back into my weekly groove. My morning started out with a 30-minute walk with the pups.  We headed out around 8:15am and it was already muggy and hot.  Luckily our neighborhood has lots of trees, so much of the walk was shaded.

However, all the shade in the world could not hide the fact that we felt like we were roasting. As soon as we came back home, Sophia buried herself into a bush to get some shade:

I was all sweaty as well, even wearing my really cool shorts (Andy hates these shorts and makes fun of them…but I don’t care, they’re comfy!)

We all headed inside to cool off and I devoured a bowl of cereal before heading off to work.  It’s back to the grind today! Luckily I am leaving for vacation on Saturday back to Emerald Isle, NC for a whole week…and I can not wait!

I got it over a year ago at TJ Maxx on clearance (it’s by Jessica Simpson in case you’re interested) and never wore it.  In fact, I had a “dress vote” to pick a dress for another friend’s wedding and it was a contender.   Sometimes digging into your own closet can be beneficial and can help save some money!
